WHOLEWHEAT BANANA BREAD
(WALNUTS OPTIONAL)
This is the second part of the 14th Bread Braid Challenge from the Healthy Bread in Five Minutes a day book. I made up the full quantity of dough and used part of it to make this small loaf in my camp oven. I will think about what I will make up with the rest of the dough over the next seven days.
I could maybe have cooked it another 5 minutes but it was ok. I was not sure how it should be and will look forward to the others made by the group as they are cooked. While quite ripe I didnt feel the banana flavour was as strong as I remembered other banana breads many years ago.
I decided to use the rest of the dough in a large loaf which can be toasted or made into french toast.
Really great! Very creative with the grill! I admire your creativity to try new ways of using the dough. I never thought of using a tube pan. And I noticed you made mini muffins last time.

ReplyDeleteit looks wonderful! Mine didn't rise that much but it was still pretty darned good. I loved to eat mine toasted with peanut butter too! that was the best!!
ReplyDeleteThis one loaf was 2/3rds of a full mixture and its the size of loaf I prefer. I find one piece toasted is enough for a quick brekkie for me so its in the freezer and will go a long way, I think I sliced it into about 10 or more pieces :)
