PICKLES, BEETROOT RELISH, CRANBERRY CHUTNEY & ONION MARMALADE


Its turning cooler now and we have a few camping trips planned, I am getting organised in my fashion and cooked these yesterday and today.  I have always liked these kind of condiments either with cheese or cold meat.  The Vegetable Pickles recipe came from Sundryd and the Onion Marmalade from Michaelb, these and other great recipes can be found at Camp oven Cooking In Australia.  The Cranberry Chutney recipe came from the Wives with Knives Blog and I googled for the beetroot relish.  I have made all but the Beetroot Relish before and enjoyed them.  They will be all the better for being made now and  "ripening" for a few weeks.  I keep them in the refrigerator but properly sealed they would be alright in a dark cool cupboard until opened.


I have some rockmelon marinating overnight and will make the Cantelope or Rockmelon Jam for the second time tomorrow.  It would be excellent on camp oven scones/damper with or without cream.  I have a couple of new for me camp oven recipes to try and am looking forward to some cooler weather to light up a fire and/or heat beads and do some experimenting.

Here it is cooling.  Very simple to make just allow 24 hours time wise for the marinating and sitting around.

The ingredients are very simple but the flavour is awesome.

2 pounds peeled and seeded rockmelon/Canteloupe.  I used one extremely large one and didnt weigh it.
3 1/2 cups sugar
1 Cinnamon Stick
2 Tablespoons Lemon Juice

  2. Hey, never heard of rockmelon jam before - it looks awesome! Who knows? One day we just might catch up on the road somewhere ... then you can show me what it tastes like!

I dont use a lot of jam - eat pretty plainly except when I go camping :) I was just away at Thora with the COCIA Group and made it for that, they all said it was great and like me could imagine it with icecream. I will be doing a Youtube of the gathering over the next month when I get emailed some extra photos. Far too many photos for in here but I might put one recipe.
