The MOTH is off to the snow and after seeing the girls who write the 4 books cook a simple fruitcake on the tv morning show I decided to make up the mixture and he can take one cake with him.  Its a lovely moist cake and he just loves fruit cake.  This has no oil, dairy, sugar or eggs.

I used:
1 Large tin of peaches in mango juice mashed up a bit
1 K of mixed dried fruit. This was soaked together overnight

This morning I added 2 cups of self raising flour and a tablespoon of mixed spice (this was my variation from the original recipe) and 1 1/2 cups of macadamia nuts. I divided the mixture between two 8" x 4" loaf tins and I cooked them at 170C for l hour.


  1. A very intersting fruit cake. It sounds very healthy.

  2. It would have a high fruit sugar content if that was an issue but no fat, eggs or dairy so that would suit some. I think you could use similar and steam it into a pudding :) More an Aussie thing I think than other countries.
