MINI RASPBERRY MUFFINS & BREAD
I decided to get an early start on my next HBin5 Bread Braid Challenge.  Whole Wheat Mixed Berry Bread (or Muffins).  I made up a half quantity of the recipe and made two mini sized loaves and 12 mini muffins. These came out much better than the raspberry scones I had made previously using frozen raspberries.  




Again very simple all the ingredients mixed till they were blended and then put aside to double in size.  Although defrosted my raspberries were very cold so I left the mix in the container, lid on but not sealed for 4 hours.






I lightly sprayed the tins and then shaped the dough and put into the tins.

I used a third for each of the mini loaves and divided the last third into twelve balls for the mini muffins.

I decided to pop a dried cranberry onto the top of each.

Then they were put under plastic for 45 minutes.



I preheated the oven to 180C.

A brush with egg wash (l egg, l tablespoon water beaten together) and a sprinkle of raw sugar and into the oven.  

The muffins were cooked in 10 minutes and the
mini loaves 20.

They smelled wonderful but I let them cool a bit before tasting.
They went well with the optional Honey Butter which consisted of 2 Tablespoons of Butter, 1 Tablespoon of Honey and 1/4 teaspoon vanilla mixed together.  I will make it another time for on scones.

  3. Your bread looks so pretty. I used mixed berries called for in the recipe and none of my taste testers liked this bread. It didn't help that the mixed berries turned it neon purple. Wish I'd used just raspberries instead of raspberries, blueberries, and blackberries.

  5. The Honey Butter is at the bottom of the page of ingredients for the Wholemeal Berry Bread its not something I created, I wish I had its truly heavenly on hot bread.

  9. Great job! The YouTube slide show is wonderful also! My husband loves raspberries but I don't think he'd eat them in this bread...I'll have to do a version from one of the ABin5. I on the other hand would love your raspberry whole wheat bread and muffins! Yum!
