Flourless Peanut Butter & Choc Chip Cookies

I made these today with a recipe from Nuttycake in the Caravaners Forum.  They cooked a bit quick but taste light and crunchy at 5 minutes and you couldnt get easier.  Makes 36.




Ingredients:

1 cup crunchy peanut butter
1 cup brown sugar
1 cup milk choc chips
1 egg, slightly beaten
1 teaspoon bicarbonate soda


Method:

Preheat oven to hot 200c. Lightly grease 3 oven trays and line with baking paper.
Place all ingredients in a mixing bowl and combine well. Roll heaped teaspoonfuls of mixture into balls and place 3cm apart on trays. Press each one down lightly with your palm. 
Bake for 8 -10 minutes, until golden brown. Cool on trays for 5 minutes before transferring to a wire rack to cool completely. Store in a airtight container.

  4. As a child my mother made me a sweet treat from memory it was raw peanut butter and honey and she rolled them in coconut. Reading your comment about the honey I can actually taste them :)
