Here is the recipe for Kays Lemon Squares.



2 Cups flour
½ Cup powdered sugar
Sift together

Cut in l cup butter.  Press into 13 x 9 pan (lightly grease sides only)
Bake 350 15-20 mins until light brown.

In mixer put 3 eggs, 1/3 Cup Lemon Juice and optional rind from lemon, blend until smooth with 2 Cups sugar. 

Sift together ½ Cup flour, ½ teaspoon baking powder and blend with egg mixture.

Pour over crust and bake at 350 20-25 mins.

Immediately sift powdered sugar over top.

A running mixture of powdered sugar and water and brushed over cookies before powdered sugar holds sugar better
